Monday Musings: I'm in a Rut

I’m in a rut. A meal rut. Now that my kitchen is updated (pics soon), I want to cook and spend time in the space, but I’m just not inspired!

We have a repertoire of 10-15 meals my family can all agree on, and we cycle through them over the course of a few weeks, sprinkling in pizza delivery and a meal out on the weekend. All has been going well on auto-pilot for the last several months. Then April arrived…


Our kitchen was a mess, and suddenly we went into high gear with children’s activities, work and other obligations. Sitting down to several dinners a week together was no longer feasible. We were doing several nights of carry out and too much microwave mac & cheese.


While it’s certainly not the end of world, I’d like to be more prepared for this kind of situation down the road when our schedules go into another temporary overdrive. I want to have some easy grab-and-go meals that are nutritious and filling. We also need to be able to eat them when we can; which may not be all together.


So, this past weekend, I started talking with friends and scrolling through Pinterest for quick meals that will meet our family’s needs. And while I don’t have it all figured out, I was able to get some great ideas. Some of my friends have bigger families and far more complicated schedules than mine. They had lots of suggestions from experience, and they were willing to share what works for them.


Once I feel like I’ve got a better handle on this challenge, I’ll be back to share what is working for us. In the meantime, I’m going to hard boil some eggs and chop some veggies for the week ahead!
