Tuesday Morning Tidy: Holiday Salad

There are a lot of versions of this quinoa and pomegranate salad out there, and for good reason! It is healthy, delicious and festive! Different recipes seems to vary the nut and onion choices, so choose what you prefer or have on hand. This is a great addition to a Christmas menu or a healthy meal-prep option for the new year.





Recipe


1 or 1.5 c dry quinoa- cook and cool

1 c. pomegranate seeds

1 T onion--either scallions, shallot or yellow onion

1/2 c toasted almonds or pistachios

2-3 clementines or 1 orange, cut into small pieces

1/4 c. dried cranberries


Dressing

1/4 c. olive oil

1/4 c. red wine vinegar

Juice from 2 clementines


Other optional add-ins: bacon, sweet potatoes, chickpeas, avocado, green beans, parsley


Toss ingredients with dressing. Sprinkle with a touch of salt. Let sit for an hour minimum, and overnight for best flavor. Voila!
