Tuesday Morning Tidy: Slow-Cooker Stuffed Pepper Soup

Need a new soup recipe for cooler weather? Eating on a Dime's slow-cooker stuffed pepper soup is delicious and easy to prepare!


Ingredients:

- 1 lb. ground beef

- 1/2 onion (chopped)

- 1 red bell pepper (diced)

- 1 green bell pepper (diced)

- 1 can diced tomatoes (14 oz.)

- 1 can tomato sauce (14 oz.)

- 3 cups beef broth

- 1 tsp oregano

- 1 tsp garlic salt

- 1/2 tsp pepper

- 2 cups white rice (cooked)

Directions:


1. In a sauce pan, add in the ground beef. Break apart and brown.

2. Drain off any excess grease and place into the crock-pot.

3. Add remaining ingredients (except for the rice). Stir and cover.

4. Set to cook for 6-8 hours.

5. Stir before serving.

6. Add into a bowl and top with a spoonful of cooked rice.
