Tuesday Morning Tidy: Chocolate Brownie Date Balls

I'm trying this Skinny Taste chocolate brownie date ball recipe this week based on a friend's recommendation. It's a healthy, sweet no-bake dessert or snack. The original calls for walnuts but I am substituting for almonds. Ingredients:

  • 3/4 cup almonds

  • 10 pitted dates

  • ¼ cup canned or homemade pumpkin purée

  • Pinch sea salt

  • 1/4 cup unsweetened cocoa powder

  • ½ teaspoon vanilla extract



Directions:

  • Prepare 1/3 cup of the almonds in a food processor and process until nuts are coarse sand. Then transfer to a small bowl and set aside.

  • Add remaining almonds to the food processor and process until finely ground.

  • Add the dates, pumpkin purée, cocoa powder, salt and vanilla extract and continue to process until ingredients are combined and smooth.

  • Scoop and roll mixture into 8 equal balls.

  • Roll each ball in the reserved almonds to coat and serve immediately or store in the freezer or the fridge.
