I'm trying this Skinny Taste chocolate brownie date ball recipe this week based on a friend's recommendation. It's a healthy, sweet no-bake dessert or snack. The original calls for walnuts but I am substituting for almonds.
Ingredients:
3/4 cup almonds
10 pitted dates
¼ cup canned or homemade pumpkin purée
Pinch sea salt
1/4 cup unsweetened cocoa powder
½ teaspoon vanilla extract

Directions:
Prepare 1/3 cup of the almonds in a food processor and process until nuts are coarse sand. Then transfer to a small bowl and set aside.
Add remaining almonds to the food processor and process until finely ground.
Add the dates, pumpkin purée, cocoa powder, salt and vanilla extract and continue to process until ingredients are combined and smooth.
Scoop and roll mixture into 8 equal balls.
Roll each ball in the reserved almonds to coat and serve immediately or store in the freezer or the fridge.
I can't wait to try this new recipe!
