Back in 2020, I shared our annual Christmas brunch menu. Since then, we've made a few revisions to accomodate some family food preferences and to streamline things in the morning. We want to focus on family, not cooking! We host 9 adults and 4 kids with this menu, and everyone is full!
Beverages (these have pretty much stayed the same)
Coffee - I brew two full pots and put one in a carafe so we don't run out!
Bailey's liquor and Caramel creamer
Mimosas, with orange juice available for the kids
Egg Casserole (2)
This should be prepared the day before and can sit overnight in the fridge. Just pop in the oven about 45 minutes before you plan to sit down for brunch.
6 pieces white bread, trimmed and cut into squares
Casserole 1: 1 lb. sausage, cooked and drained; Casserole 2: 2 cups cooked mushrooms
1 c sharp cheddar cheese, grated
2 c. milk
1 tsp. mustard
1 tsp. Salt
6 eggs
Layer bread in bottom of large casserole - top with drained sausage/mushrooms. Cover with cheese. Mix milk, eggs, mustard, and salt. Pour over other ingredients. Let set in refrigerate overnight, covered. Bake at 350 degrees for 40 minutes. Makes 6-8 servings. Watch after 20-25 minutes.

Fruit Salad
While we loved the fruit compote on the previous menu, the kids prefer fresh fruit, and it's a whole lot less work. Strawberries, blueberries and canned mandarin oranges are the favorite combo.
This menu is a crowd pleaser! We are all full and usually spend the next few hours watching Home Alone or Christmas Vacation before heading out to enjoy some additional holiday festivities.
